Parsnip Fries

Parsnips are one of my favorite root vegetables. I never ate them until I started shopping at my farmer’s market a few years ago. They are one of the few vegetables available at the market in the winter, so I pick some up every week! 

Not only are parsnips delicious, they are so nutritious too: 

  • Parsnips are high in Vitamin C, which is a potent antioxidant and important for our immune health. 
  • Parsnips are high in Vitamin B9 (or folate) which is important for heart health and reproductive function.

These parsnip fries are a delicious side dish for any meal!

Parsnip Fries

Ingredients

  • 4 medium sized parsnips (about 1.5lbs)
  • 2 tbs lard melted, or cooking fat of choice
  • 2 tsp chili powder
  • 1 tsp oregano
  • 1/4 tsp granulated garlic
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees F
  2. Peel the parsnips and chop into the shape of fries, try to make sure they are uniform so they cook evenly. I like the fries to be about 3 inches long and thin (as seen in the photo on this recipe), but it’s up to your preference. The thinner the fries are, the quicker they will cook.
  3. Add the parsnip fries to a parchment paper lined baking sheet (use 2 baking sheets if you need more room). Combine the spices and sprinkle over the fries, then pour the lard over the fries. Use your hands to mix the fries, spices, and lard evenly. When combined spread the fries over the baking sheet, be sure not to crowd the pan.
  4. Cook for 17-20 mins or until browned on the bottoms. Enjoy!
