These strawberry mint popsicles are so delicious and easy to make! I created this recipe to use some of the mint that’s growing in my garden and it adds the perfect amount of freshness. I love coconut milk as the base for popsicles because it’s full of healthy fat and makes them so creamy! The fat in the coconut milk is super filling, so these popsicles are a satisfying treat.
These popsicles are so refreshing to pull out of the freezer on hot summer days!

- 1 can full fat coconut milk, or Trader Joe’s coconut cream
- 3 cups strawberries (frozen strawberries can also be used, they will give a slightly icy texture)
- 1/4 cup mint, packed
- 1/4 cup coconut sugar
Special Equipment: Blender
- Place all ingredients in your blender, I use a Vitamix, and blend until completely combined and smooth.
- Pour blended mixture into popsicle molds and freeze. I usually freeze them overnight and they are ready the next day! Makes about ten 3oz popsicles.
