Parsnips are one of my favorite root vegetables. They are one of the few vegetables available at the market in the winter, so I pick some up every week! Not only are parsnips a delicious low carb "french fry" option, they are so nutritious too!
This roasted acorn squash is one of my favorite fall side dishes. It is so easy to prep and the Indian spices pair perfectly with the flavor of the acorn squash!
This is a delicious side dish made with fresh summer herbs and veggies. I have been making it all summer using herbs from my little city garden!
These Strawberry Mint Popsicles are so delicious and easy to make! They are such a refreshing summer treat and only take about 10 minutes to prep for the freezer!

It’s been a while since I’ve posted to my blog! So much has been going on, I didn’t have the time or energy to keep up with Paleo Bee. Now that things have slowed down, I’m excited to give an update on my life and get back to posting on here!
Fast casual restaurants are a great option when you want a quick meal! There are so many delicious, healthy, and gluten-free friendly fast casual restaurants in the DC area. These are some of my favorites!
A guide to eating gluten-free and paleo in Edinburgh, Scotland. After spending time in England my boyfriend and I took the train to Edinburgh, Scotland. This was our first time visiting Edinburgh and we absolutely loved it. We spent 5 days exploring and eating our way through this beautiful city.

We spent the first part of our trip in the Liverpool area of England and had one day in Conwy, Wales.

I'll admit, this diet change didn't start out easy, so I can understand why some people struggle with making sustainable changes. These are the important factors that have helped me sustain my paleo diet.
I spent Memorial Day weekend in Lancaster, Pennsylvania celebrating the wedding of one of my best friends. Lancaster is a small town, surrounded by farmland, and has a large Amish population. Many of the restaurants in the area focus on local and organic food, and have gluten-free options!
I can’t get enough of this double chocolate freezer fudge! The healthy fats from the coconut shreds, coconut oil, and macadamia nuts make this fudge so satisfying. There is only a hint of sweetness, so this tastes like a treat without being overly sweet!
